This Festive Drink – A Recipe
WThis is an easy interpretation of a beverage from our latest cocktail list. This is a large-volume prepared mix that is loaded full of essence associated with Christmas time, making it ideal for hosting a festive gathering. Any leftover syrup to use in breakfast cocktails, sweets, or to make more rounds of this cocktail.

Makes enough for 10 people
Ingredients for the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Premix (makes 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (see above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Instructions
Making the Citrus Syrup: Place the listed components in a pot, heat until it reaches a simmer, stirring to dissolve. Then, turn off the burner allowing it to cool down fully. Pour to a clean bottle, cap it keeping it chilled, it will last for about four weeks.
To make Premix: Combine all the liquid ingredients into one big jug, allow it to infuse for an hour, then filter it best through cheesecloth, so it's perfectly clear.
For serving: Add 85ml from the batch mix into a mixing glass filled with ice, and stir carefully for one minute to cool it down. Pour into an frosted cocktail glass or similar, decorate with a few cranberries and finish by giving it a brief mist of mandarin oil over the top.
